Description

Centuries ago (and today in under-developed countries) you will find grains that have been used for generations. Unlike the western world, where many commercially raised wheat, soy and corn have been hybridized or have become genetically modified, these grains remain untouched by modern society. Teff, Amaranth and Quinoa are examples of heirloom, non-gluten grain. They come from South America and Africa and have remained unchanged as heirloom seeds year after year.

Basic Cooking instructions: 

  • 2 cups water
  • 1 cup quinoa

Bring water to a boil in a sauce pan. Add quinoa. Bring back to boil. Cover. Let simmer over medium heat for 12 minutes or until Quinoa has absorbed all the water. Remove from heat and fluff. Cover again and let stand for approximately 15 minutes. Yields 4 cups.

A Recipe to try :

Garden Fresh Tabouli Salad

  • 2 cups cooked Quinoa(Cooled)
  • 1 cucumber (diced)
  • 1 tomato (diced)
  • 8 green onions (diced)
  • 1/2 cup fresh chopped mint
  • 2 cups fresh chopped parsley
  • 1 clove garlic (minced)

Dressing: 

  • 1/2 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 tsp. freshly ground pepper
  • 2 tsp. salt or to taste

Combine all ingredients and toss in a medium bowl. Serve chilled or at room temperature. Makes about 8 cups. 12 – 16 servings.
